Torched Honey Baked Ham

  • 1 pre-cooked spiral sliced ham 8-10 pounds, bone-in
  • 1/2 cup honey
  • 1/2 cup water + another ½ cup water
  • 2 cups white granulated sugar
  • 1 tsp cinnamon
  • 1 tsp ground nutmeg (1 ½ tsp if fresh grated)
  • 1 tsp ground cloves
  • 1 tsp paprika
  • 1/2 tsp ground ginger


  • Preheat grill to 275F (indirect heat).  May alternatively use oven
  • Unwrap ham, remove and discard all packaging
  • Place ham in roasting pan face down, drizzle honey over entire exposed surface of ham, add ½ cup water to pan then cover and tent with aluminum foil
  • Cook ham 10 minutes per pound
  • Before removing ham from oven, mix sugar and all remaining spices together.  Add sugar mixture and ½ cup of juices from the bottom of ham roasting pan to sugar mixure.  Bring mixture to a boil for 1 minute then immediately spread on outer surface of ham. If mixture is too thick, add water by 1 TBSP increments.  The mixture will thin as the sugar dissolves, but will get much thicker quickly after removing from the heat. Cautious it will be HOT. Spread with a spoon or knife, do not touch the sugar with your fingers
  • Use the Bernzomatic ST2200T Detail Torch or torch of choice in a sweeping motion over the molten sugar until it bubbles into a nice sugar crust.
  • Serve warm, room temperature or cold if desired
